I'm a writer who started as a baker who didn’t bake, a dental assistant to the dental assistant and a shoe saleswoman who gagged around feet.

 

Since then, I've been paid to write all kinds of stuff for all kinds of companies in all kinds of offices. I've even  written newspaper ads for car dealers (your puppy has probably pooped on some of my best work).

This 1700s Gumbo has ALL THE THINGS | Ancient Recipes With Sohla

Read more Sohla is cooking up an old school Creole favorite - a gumbo recipe from the 1700s that contains 4 types of protein in one pot. This delicious stew combines West African and Native American cultural traditions with French and Spanish ingredients, plus it’s the official cuisine of Louisiana. Learn more about it’s history in this episode of Ancient Recipes With Sohla! THE RECIPES - kosher salt - 1 pound boneless beef short rib, cut into 1-inch pieces - 1 ham knuckle, deboned & cut into 1-inch pieces - ½ cup lard - ½ cup all-purpose flour - 2 large crabs, cut into quarters - 4 dozen okra pods, sliced into ½-inch rounds - 1 large yellow onion, peeled and chopped - 1 green bell pepper, seeded and chopped - 3 celery stalks, chopped - 1 pound peeled shrimp - cooked Carolina gold rice for serving 1. Generously season the beef all over with kosher salt. 2. In a large pot, heat the lard over medium-high heat. Sear the beef and pork knuckle in batches until deeply browned on all sides. 3. Transfer to a plate and set aside. 4. Reduce heat to medium. Add the flour and cook, stirring constantly, until it’s a peanut butter brown color. 5. Add the okra, onion, pepper, celery, and big pinch of kosher salt. 6. Cook, stirring constantly until tender, about 5 minutes. 7. Add the crab, beef, and ham and cook, stirring frequently, for about 15 minutes. 8. Add enough water to cover the contents 2 inches deep. Bring to a boil then reduce to a simmer. 9. Add salt to taste and cook until the beef is tender, about 2 hours. 10. Add the shrimp and simmer until cooked, about 3 minutes. Should meat jelly make a comeback? | Ancient Recipes With Sohla

Read more Sohla tackles the wildest recipe yet - an aspic jelly with fish tongues and lips from the earliest known Arabic cookbook, in this episode of Ancient Recipes. THE RECIPE Ingredients: - 2 tablespoons coriander seeds, coarsely ground - 1 tablespoon dried spikenard - 5 whole cloves - 1 teaspoon whole black peppercorns - 1 teaspoon whole long pepper - 6 to 8 large carp heads - ½ cup white wine vinegar - 1 small bunch parsley, tied with twine - 1 3-inch piece galangal, scrubbed & split in half lengthwise - 1 3-inch piece ginger, scrubbed & split in half lengthwise - 1 3-inch piece cassia - 3 small onions, root trimmed & peeled - 2 teaspoons saffron threads Process: 1. In a double-layered piece of cheesecloth, combine coriander, spikenard, cloves, black pepper, and long pepper, and wrap in a bundle securing with twine. Wrap parsley together in a bundle and secure with twine. 2. Add carp heads to a large stockpot and cover with water. Add vinegar, parsley, galangal, ginger, cassia, onions, and the bundle of spices. 3. Cover and bring to a simmer over high heat. Reduce heat to maintain a gentle simmer and cook, partially covered, until the heads are totally tender - about 1 hour. 4. Use tongs to remove the heads and set aside until cool enough to handle. Strain the stock and discard the solids. Return the stock to the pot. 5. With your fingers, crush the saffron threads into a small bowl. Add ¼ cup of the fish stock and set aside to bloom. 6. Pull the lips and tongues from the fish heads and add to the pot of fish stock. 7. Add the steeped saffron to the pot and gently simmer uncovered until reduced by half. 8. Read more In this Halloween edition of Ancient Recipes, Sohla recreates two recipes with a spooky past. First, she bakes a rye bread that may have been responsible for the Salem Witch Trials. Then she crafts the original Halloween treat - Druid Soul Cakes! THE RECIPES Rye Bread Recipe: - ½ cup medium grind cornmeal - 1 tablespoon kosher salt - ½ cup ale barm - About 5 cups rye flour - About 1/2 cup of lukewarm water 1. In a medium saucepan or cast iron skillet, bring 2 cups of water to a boil. Whisk in the cornmeal and salt and simmer until thickened. Transfer to a large bowl and set aside to cool until lukewarm. 2. Add rye flour & salt to a large bowl and mix together. 3. Add ale barm & cooled corn meal. Mix until evenly combined. 4. Gradually add water until a dough starts to form. 5. Knead for about 6-8 minutes. The dough will likely be stickier than a normal bread dough you are used to. 6. Place the dough into a greased bowl. Cover and let rise for an hour. 7. Divide the dough into 2 loaves. Roll into large balls & punch down slightly. Cover & let proof for about 2 hours. 8. Heat the oven with a baking stone to 375F. Transfer the bread to the stone and bake until it sounds hollow - about 45 minutes. Druid Soul Cake Recipe: - 6 ounces unsalted cultured butter, room temperature - 6 ounces mild honey - 1 teaspoon ground cinnamon - 1 teaspoon finely chopped fresh rosemary - Big pinch saffron threads - 1 pound whole wheat flour - ½ cup ale barm - 4 ounces dried currants - Whole milk 1. Cream together the butter, honey, cinnamon, rosemary, and saffron until fluffy. 2. Add the flour, ale barm, and mix to combine. 3. Fold in the currants so they’re evenly dispersed. 4. Break up the dough into 1” balls. Press them gently into a cookie shape until they’re about 1/4” thick. 5. Use a butter knife to mark each soul cake with a cross. Brush each one with milk. 6.
